Description:  Red clover is a low-growing, flowering plant commonly found in fields, meadows and other undisturbed grounds. Like many other members of the legume family, red clover contains isoflavones and coumarin compounds, the latter of which are partly responsible for the sweet taste of the flower tops that bees enjoy visiting and people enjoy in salads and teas.

A delicate, sweet herbal tea is made from the fresh or dried flowers. Together with the flowers, the somewhat bitter leaves are also used in tea blends. Red Clover is edible, the young leaves and new flowers are harvested, and are used in salads, soups, or as a pot herb. The sprouted seeds are edible in salads and have a crisp texture and robust flavor.

Red clover flowers and leaves are also used to make infusions and extracts for use in skin and hair preparations. Internally, the Red Clover plant is used as an alternative remedy for skin complaints such as eczema, psoriasis, boils, and acne.

Trifolium exerts some of the strongest phytoestrogenic effects among medicinal plants. Valuable for menopausal women because of its phyotoestrogenic and mineral constituents.

Red Clover has been used as an anticancer herb. Poultices of the herb have been used as local applications to cancerous growths. Internally, it is also used for cancers of the breast, ovaries and lymphatic system, chronic degenerative diseases, gout, whooping cough and dry coughs.

Botany, Cultivation & Harvesting:  Trifolium pratense is native to Europe, Western Asia and northwest Africa, but planted and naturalized in many other regions. It is an herbaceous, short-lived perennial plant.

Red clover varies greatly in size, with heights ranging from roughly 8 inches to 2-1/2 feet. It produces alternate, trifoliate (with three leaflets) leaves. The leaflets are green with a characteristic pale crescent in the outer half of the leaf; they measure roughly 15–30 mm long and 8–15 mm wide. The leafstalk is 1–4 cm long, with a pair of basal stipules.

Red clover flowers are produced in a dense inflorescence and appear dark pink with a paler base, they are 12–15 mm long.

Red clover grows in meadows, pastures and grassy areas in full sun. It prefers a moist, well-drained, medium to heavy loam soil.

To grow, pre-soak the red clover seed for 12 hours in warm water and then sow directly into the garden soil during the spring. If you have a scarce quantity of seed it might be better to sow it in pots in a cold frame. When they are large enough to handle, transplant the seedlings out into individual pots and plant them out in late spring. Mature plants may also be propagated by division in spring.

The plant flowers and leaves are normally harvested and dried for use as it comes into flower. Harvest edible leaves for salad before flowers fully bloom. Seeds would be collected after flowering.

Store dried red clover flowers, red clover seeds and other plant parts in an airtight container in a cool, dry place.
